Focusing on the organic and natural, executive chef Erin Eastland not only frequents the Santa Monica Farmers Market but is also a regular at Cube’s own downtown rooftop garden, where she sources the freshest, most palatable local ingredients. Cube’s dishes are high on Italian flavor; the braised bacon lasagna with charred radicchio and spicy fried chicken with kabocha and goat cheese mash stand out, though it's hard to pick favorites. First impressions are important, and Cube makes a fine and seductive statement with a cheese amuse bouche. With names like Hooligan, Constant Bliss, Devil’s Gulch and Grand Causses, the “you-got-me-curious” 60-plus cheese list is an enticing must-try and pairs perfectly with the 100 percent Italian wine list.
