Summer can be sweet, but somebody’s got to pull together those lazy beach barbecues and backyard family reunions that end up cutting into our leisure time. And that somebody is Dickson’s Farmstand Meats, the Chelsea Market purveyor of humanely raised meats and poultry that’s all sourced from local, sustainable farms. Each week, Dickson’s puts together an astonishing grilling package—just be careful not to toss the whole thing on the barbie as is—with 12 sausages (salt-and-pepper; chili garlic; and Texas Hot Links), enough ground beef (five pounds) for a dozen burgers, and—for BBE subscribers only—an extra four beef-with-red-wine sausages. All meat is vacuum-sealed and can be kept refrigerated for up to a week (frozen for a few months), and each package comes with ice packs and insulated bags for traveling. The sausages are made by Dickson’s charcutier David Schuttenberg; the ground beef is dry-aged and ground in-house. But wait—there’s more! The Summer Grilling Spectacular also comes with cooked items (prepared in Dickson’s own kitchen): a three-to-four pound chicken; two pounds of pulled pork; and a pint of barbecued baked beans.
