Belcampo doesn’t stop at just knowing where their food is sourced; they pride themselves on shepherding the food chains beginning to end. This “operation” handles it all, from humanely raising cattle, plus rabbits and rarer birds like squab, through to serving grass-fed burgers with tallow fries from their butcher-stall in Grand Central Market, further on to presenting fanciful meals replete with farm-fresh drinks by Josh Goldman in their swanky art deco restaurant in Santa Monica.

Their flagship location is elegance defined: Chef Maiki Le (24 Hour Restaurant Battle, Chopped) celebrates classics like steak frites, fun twists like the French dip eclair, made with pâte à choux, and revelatory plates like eyes-rolled-back-luscious goat tartare. The pork rib chop is instantly addictive—bone-in, beautifully marbled and grilled, with yogurt spätzle, oyster mushrooms, delicate Brussels sprouts, and pomegranate molasses.

The magic of Belcampo is rooted in terroir. Their pigs are specially crossbred (Berkshire, Duroc, and Ossabaw) for fat and flavor, and live in Shasta Valley, foraging in forest-filled hills and wetlands to supplement their grain-based diets. Belcampo grows their own crops too, so even the meat-free menu sections are exciting. Humble cauliflower is made extraordinary with watercress pesto, anchovy breadcrumbs, and Parmigiano-Reggiano. Snap peas, with dukkah.

But lest we forget, this place is in proud service of carnivores. You won’t want to leave until you’ve tested the human limits for protein consumption.
