Michael Mina takes you well beyond the expected in four courses

All steakhouses are not created equal. With Bourbon Steak, illustrious restaurateur Michael Mina has executed a unique spin on the traditional steakhouse concept, featuring a tantalizing menu highlighting a fusion of global flavors, a distinctive bar program, and playful trolley carts filled with confections, canapés, and fine liquors. Of course, we would expect nothing less from a chef of this caliber, James Beard award and all.

Exclusive for BBE, Bourbon Steak has created an elegant four-course prix fixe menu ($59) that commences with a freshly baked Parker House roll dusted with fleur de sel. Next enjoy an amuse from executive chef Kyle Johnson—perhaps an oyster with saffron caviar and Champagne vinaigrette—or another seasonal specialty item of his choosing.

The first course is ahi tuna sashimi over a tart citrus sauce, topped with lemon segments, avocado slices, and delicate nasturtium leaves. Following is a baby iceberg wedge salad lightly drizzled with buttermilk ranch dressing and sprinkled with smoked blue cheese, cherry tomatoes, and chunks of pork belly.

For the main course, you can choose between Mary’s roast chicken—a succulent boneless breast with crispy skin on top of cauliflower puree and surrounded by baby cauliflower, almonds, and golden raisins—or the tender wood-grilled petite filet mignon, sliced and paired with a rich black garlic–walnut puree and streusel alongside whipped potatoes and scattered Brussels sprout leaves.

Finally, you’ll be stoked to see the word “deconstructed” when it comes to the cheesecake— creamy dollops patterned next to berry preserves and a Graham cracker crumble. End the evening on an even sweeter note as you’re sent off with a piece of Bourbon caramel candy wrapped in gold.
