Pop some bubbly and celebrate in serious style at Paley

By Grace Jidoun

It should probably go without saying, but celebrations should feel, well, genuinely celebratory: A fresh moment that rises above ordinary and everyday. Meet the new way to get festive over a Champagne dinner—one that’s modern, lively, and refreshingly unpretentious—at Paley.

This packed spot has soared over the stuffy, quiet dining rooms of yesteryear’s celebrations with an unbeatable combination of inventive cooking and a special enticement on Friday and Saturday nights just for BlackboardEats subscribers. Groups of four to eight will receive a complimentary bottle of Laurent-Perrier Brut Champagne plus dessert. Add in flickering candlelight and an Old Hollywood pedigree—home to the original CBS Studios—and the glamour quotient is off the charts. Even on a weeknight, you'll find large groups boisterously holding court in the sparkling gold-and-black Art Deco dining room.

The New American menu features a mix of small and large plates, with a handful of impressive raw bar selections. The ever-evolving kitchen just introduced about a dozen new dishes, including a clever "sushi sandwich" with shrimp, crab, spinach, and avocado. Tender seared salmon is another especially tantalizing new addition, along with curried Brussels sprouts studded with pomegranate seeds and white raisins.
Paley’s daily specials of comfort food favorites, like short ribs and Jidori fried chicken arrive just in time for the holiday season. Despite all the changes, many of the most popular dishes remain menu mainstays. Two that can't be missed are lobster mac and cheese and tater tots sprinkled with truffle oil and Parmesan—the perfect way to soak up all that bubbly.

When it comes to dessert, you won’t stand a chance against the s'mores trifle (gluten-free, no less) or the popcorn ice cream with salted chocolate rocher. The pastry chef, who recently visited Spain, has also introduced a Basque-style cheesecake, incorporating granola garnish and avocado ice cream and somehow still seeming decadent. Only in LA.
