The plant-based mecca with something delicious for everyone

It’s not every day that you come across a menu of vegan options that reads as long as your friends’ political Facebook screeds. But in the case of Sage Vegan Bistro, a full read of this inspired manifesto promises to leave you energized, satisfied, and brimming with good vibes. Going strong with three locations and seven years of success, this plant-based mecca in eco-industrial digs truly does have something for everyone, from seasoned vegans to recent converts who just watched Netflix’s What The Health.

The real star at Sage is the comfort food: While unpretentious, these dishes are showered with thoughtful details that give them that #SaltBae touch. The nachos are a kaleidoscope of colors and flavors, piled high with pickled red cabbage and cauliflower, creamy avocado, whole jackfruit magically transformed into tender shreds of “carnitas,” and a drizzle of mole and cashew cheese.

Elias Sosa and Mollie Engelhart, the husband-and-wife duo who helm Sage, even give the humble butternut squash ravioli an upgrade: fried and crispy, these pillows sit on a bed of lemony kale, reminiscent of a braised Thanksgiving side.
It’s clear that these co-executive chefs have put a lot of love into their dishes, as they source nearly all their produce from farmers with whom they’ve shared close relationships for years. It also seems fitting, since both of them grew up on farms—Engelhart in upstate New York, and Sosa in Oaxaca, Mexico.

As Sage originally grew out of the raw, vegan, and organic dessert spot Kind Kreme, it’s no surprise that the team offers plenty of sweet ways to end your meal, from ice cream and shakes to brownies and cakes. Maybe less expected, but no less welcome, is that they also make their own small-batch vegan beer. If you feel like doing a bit of guilt-free indulging of either sort, your chances don’t get any better than this.
